A Message from the President

Hi Everyone,

Welcome to a New Year flush with fresh new opportunities. I can feel things starting to turn around in our favor. Many of our clients have asked us to help them find technical people for new projects. What great news! We are going to list some of the jobs that we are working on in this newsletter. If you know of anyone who would be qualified for any of our open positions please let us know and pass on this newsletter to them. It’s going to be a better year for all of us, I can just feel it.

I am planning on attending several Industry Trade Shows in the next couple of months. The NCC AVS Show, the SPIE Show  and the Strategies in Light-the LED Show. There should be some very interesting developments and new products at these shows. I am always amazed at what we have accomplished as an industry in the past 25 years since I started working with these talented Engineering oriented people. I will be making my rounds at these shows and I hope to see you there.

Valentine’s Day is right around the corner and I want to encourage all you hopeful romantics to do something sweet for the one that you love. That’s right, I mean you. Put down your cell phone and plan out what your multi gifted gifts will include. For the less insightful, this should include Dinner at a place with tablecloths and waiters. Another good idea is to start the evening with some flowers, it doesn’t have to be roses. If your Man/Woman is the thirsty type then maybe a bottle of his/her favorite beverage and some sort of appetizer. Keep it simple and you will be able to start your night out with panache.

Enjoy these winter months they will go by fast and we will be enjoying blue skies and warmer weather soon.

Nutella Bottom Pecan Pie

6 tbsp butter
3/4 cup brown sugar
3/4 cup light karo syrup, (light refering to the color not health)
1/2 tsp kosher salt
1 tsp pure vanilla extract
1/2 tsp coconut extract
3 eggs, beaten (only use 2 if using extra large eggs)
1/2 cup sweetened coconut flakes
1 cup pecans
1 frozen 9" deep dish pie crust, unbaked
1/2 cup nutella

Preheat oven to 350 degrees. Place rack in upper third of oven. Line a sheet pan with aluminum foil or parchment paper.

Add the butter, sugar, karo syrup and salt to a saucepan and place over medium heat. Heat over medium, stirring frequently, until the butter has melted and the brown sugar has dissolved, about 7-10 minutes. Remove from heat and stir in vanilla and coconut extracts. Let cool for 10 minutes.

While the sugar mixture is cooling, spread the Nutella evenly in the bottom of the unbaked pie crust. Place the crust onto the lined sheet pan.

Once the sugar mixture has cooled, whisk in the beaten eggs until completely incorporated. Stir in the sweetened coconut flakes and pecans.

Pour the pecan-sugar mixture into the pie crust over the nutella. Place the sheet pan with the pie on to the rack in the upper third of the oven. Bake at 350 for about 55 minutes to 1 hour or until golden and when shaken the center is still jiggly like jelly but solid through.

Remove from oven and place on a wire rack to cool. Cool completely before serving. Pie may be made 2 days in advance and stored, covered, at room temperature. Enjoy!
